Overview
This authentic Grenadian farm to table culinary tour truly delivers an immersive community experience. You will learn all about Grenada’s delicious National Dish, Oil Down, which uses fresh vegetables and herbs grown on the farm that surrounds your open-air kitchen. Some days the menu varies, and Theresa will prepare a heritage meal with vegetables and produce that is in season and available to give you a tasty Grenadian meal, which truly combines our multicultural heritage! Chicken and rice and peas all grown on the farm is a favourite, as is breadfruit and eggplant!
Your Host, Theresa will explain the health benefits of all the local vegetables while you learn how the Grenadians “pack the pot” layering the variety of freshly picked ingredients, like yams, leafy callaloo, spinach, coconut milk and herbs and spices.
The open fire is fuelled with coconut shells which create a vibrant heat required to quickly cook the dish. You will enjoy an informative tour of the crops and learn about rotation practices. The farm has its own water supply and irrigation system. This very successful island-wide farm cooperative is used as a model in 27 Caribbean countries. Led by Theresa, the Executive arrange educational courses and field trips for the members of the cooperative as well as write proposals which are successful in gaining funding for much needed supplies.
This model cooperative has been supported by grants from the Sandals Foundation and UNDP. Having started out with supplying produce for hotels and restaurants and virgin coconut oil for hotel Spas, the group is now venturing into the Eco-tourism sector and is happy to be able to share their day-to-day life with you.
